Ham Salad: Recipe Sunday
With luck, this will be my last night in a hotel, and I will be back in my kitchen tommorrow. But for now, I am stuck doing one last recipe without having a kitchen or any facilities with which to prepare food. So I thought I’d share my preferred way of using up the leftover Easter Ham: ham salad.
My wife isn’t a big fan of ham, so I wind up having to eat all of the leftover ham myself. No worries. Ham salad is one of my my 10 favorite foods. A lot of it, I will eat right out of the bowl. Stuffed in a pita or wrapped in a tortilla are also preferred methods.
- 1 inch cooked ham slice
- ½ c. mayonnaise
- ¼ c. relish
- salt & pepper to taste
- Dice ham into small cubes. Even better, feed it into a food processor to mince it.
- Mix all ingredients together.
